INGREDIENTS
2 seedless cucumbers, chopped
3 Tbs lemon, juiced
1 Small shallot
1 clove garlic, chopped
1/3 cup fresh dill
1/4 cup fresh parsley
2 Tbs olive oil
1/4 cup radish, chopped finely
1 1/2 cups plain Greek yogurt
DIRECTIONS
Make
In a blender, combine the chopped cucumber with the yogurt, lemon juice, shallot, garlic, dill, parsley, and olive oil. Blend until smooth.
Season with salt and pepper to taste.
Refrigerate until cool.
Note: Season the soup again just before serving. Pour the soup into bowls. Garnish with the finely diced cucumber, red onion and a drizzle of olive oil and serve.
