RECIPE: Sweet Potato Oven Fries with Taco Seasoning

Makes: 4 servings


INGREDIENTS

  • 4 sweet potatoes, small, sliced

  • 2 Tbs olive oil

  • 1 Tbs taco seasoning (store bought or home-made, see below)

Homemade Taco Seasoning (serves 8)

  • 1 Tbs chili powder

  • 2 tsp cumin, ground

  • 1 tsp oregano, dried

  • 1 tsp garlic powder

  • 1 tsp paprika, smoked (or regular)

  • 1/2 tsp onion powder

  • 1/4 tsp salt

  • 1/8 tsp cayenne pepper (optional

DIRECTIONS


Prep

  1. Preheat oven to 400ºF. Tip: Put baking sheet in oven to warm up while pre-heating.

  2. Cut potatoes lengthwise into 3/4-inch wedges.

  3. Make taco seasoning by adding ingredients to a clean spice jar. Shake well. Label. Store in your spice cabinet.


Make

  1. Line baking tray with parchment

  2. Toss sweet potatoes with olive oil, 1 tbsp of taco seasoning (homemade or store bought). Add potatoes to baking sheet in a single layer (no mounds).

  3. Roast for 20-25 minutes or until tender, gently tossing halfway through.


Enjoy for dinner. Save leftovers to enjoy with morning eggs, added to lunch salads, or as an afternoon snack. Try roasted potatoes with other homemade spice blends in handout below.
