Roasted Delicata Squash and Apples

Total Time: 55 minutes

Makes: 4 serving


  • 2 medium delicata squash, cut in half, seeds removed, cut in 1/4" slices (or other squash)

  • 2 gala apples, cored, and cut into 1/4" slices

  • salt, pinch

  • 1 Tbs olive oil



  1. Cut the squash in half and remove seeds. Cut into 1/4" slices.

  2. Core the apple and cut into 1/4" slices.


  1. Preheat oven to 350°F and line a large baking sheet with parchment paper.

  2. In a large bowl combine the sliced squash, apples, olive oil and a pinch of salt. Toss thoroughly to combine and spread out in a single layer on the baking sheet. Bake for 40-50 minutes and turn halfway through cooking. Squash and apples should be slightly browned, but still soft.
