Ingredients
1 1/2 cup black beans, canned, drained and rinsed
2 Tbs cocoa powder
1/2 cup oats
1/4 tsp salt
1/3 cup maple syrup
1/4 cup coconut oil, melted
2 tsp vanilla extract
1 1/2 tsp baking powder
1/2 cup dark chocolate chips (minis preferred)
Directions
Prep
Rinse and drain beans.
Melt coconut oil.
Make
Preheat oven to 350° F.
Place all ingredients, except chocolate chips, in food processor and blend until completely smooth.
Stir in chips.
Spread in greased 8x8 baking pan or using a tablespoon, place in greased mini-muffin tins
Cook for 20 minutes [pan] or 8-10 minutes [muffin tins] then remove from oven and cool for at least 15 minutes before cutting.
Notes: This recipe makes approximately 24 mini muffins or 3 muffins per serving. Perfect for that sweet craving after. a meal. Bake and freeze to make them even more convenient. The saturated fat content in this recipe comes from coconut oil. If you are watching your saturated fat intake, feel free to swap in your favorite baking oil like a cold-pressed organic canola or light olive oil.
