RECIPE: Shaved Brussels Sprouts Salad

Makes 6 servings


INGREDIENTS


Salad

2 lb Brussels sprouts, shaved

2 pears, 1/4" slices

1 cup pomegranate arils (1 small pomegranate, or prepared arils (found in produce section & frozen food aisle)

1/3 cup pecans, raw, roughly chopped


Creamy Tahini Dressing

1/4 cup olive oil

1/4 cup tahini

1 lemon, juiced (for 1/2 Tbs juice)

2 tsp Dijon mustard

2 tsp maple syrup

2 Tbs cold water

Salt and pepper to taste


DIRECTIONS


Prep

  1. For fastest prep use a food processor to shave the Brussels sprouts, or trim the ends and thinly slice by hand.

  2. Seed the pomegranate (or purchase arils in produce or freezer section).

  3. Roughly chop the pecans.

  4. Slice the pears.

Make

  1. Combine the shaved Brussels sprouts, pears, pomegranates and pecans in a bowl.

  2. To make the dressing, combine all ingredients in a mason jar and shake to combine.

  3. If necessary add more water to thin the dressing.

  4. Season to taste with salt.

  5. When ready to serve the salad, drizzle the dressing over the salad ingredients and toss to combine.

Note: Take help where you can get it - look for pre-seeded pomegranate arils in your produce or freezer aisle. For a heartier salad add your favorite whole grain.
